Ingredients
Pastry:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup cold unsalted butter, diced
- 1/4 to 1/2 cup ice water
Filling:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 pound ground beef or turkey
- 1/2 cup diced carrots
- 1/2 cup diced potatoes
- 1/2 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 tablespoon tomato paste
- 1/4 cup beef or chicken broth
Egg Wash:
- 1 egg, beaten with 1 tablespoon water
Instructions
- Prepare the Pastry:
- In a large bowl, combine the flour and salt.
- Add the cold, diced butter. Using a pastry cutter or your fingers, rub the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. It should be firm but not sticky.
- Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the Filling:
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic, and cook until softened.
- Add the ground beef or turkey, and cook until browned. Drain any excess fat.
- Stir in the diced carrots, potatoes, peas, thyme, rosemary, salt, and pepper. Cook for 5-7 minutes until the vegetables are tender.
- Add the tomato paste and beef or chicken broth. Stir to combine and cook for another 2-3 minutes until the mixture is thickened. Remove from heat and let cool.
- Assemble the Hand Pies:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a floured surface, roll out one of the dough discs to about 1/8 inch thickness. Use a round cutter (about 4-5 inches in diameter) to cut out circles.
- Place a heaping tablespoon of the filling in the center of each circle.
