Savory Hand Pies are a delightful and versatile dish, perfect for a snack, appetizer, or even a main course. They can be filled with a variety of ingredients, making them customizable to your taste. Here’s a basic recipe for making savory hand pies with a classic meat and vegetable filling:

Ingredients

Pastry:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup cold unsalted butter, diced
  • 1/4 to 1/2 cup ice water

Filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 pound ground beef or turkey
  • 1/2 cup diced carrots
  • 1/2 cup diced potatoes
  • 1/2 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon tomato paste
  • 1/4 cup beef or chicken broth

Egg Wash:

  • 1 egg, beaten with 1 tablespoon water

Instructions

  1. Prepare the Pastry:
    • In a large bowl, combine the flour and salt.
    • Add the cold, diced butter. Using a pastry cutter or your fingers, rub the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. It should be firm but not sticky.
    • Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling:
    • Heat the olive oil in a large skillet over medium heat.
    • Add the chopped onion and garlic, and cook until softened.
    • Add the ground beef or turkey, and cook until browned. Drain any excess fat.
    • Stir in the diced carrots, potatoes, peas, thyme, rosemary, salt, and pepper. Cook for 5-7 minutes until the vegetables are tender.
    • Add the tomato paste and beef or chicken broth. Stir to combine and cook for another 2-3 minutes until the mixture is thickened. Remove from heat and let cool.
  3. Assemble the Hand Pies:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • On a floured surface, roll out one of the dough discs to about 1/8 inch thickness. Use a round cutter (about 4-5 inches in diameter) to cut out circles.
    • Place a heaping tablespoon of the filling in the center of each circle.
    • Brush the edges of the dough with the beaten egg wash. Fold the dough over the filling to form a half-moon shape. Press the edges together with a fork to seal.
    • Repeat with the remaining dough and filling.
  4. Bake the Hand Pies:
    • Place the assembled hand pies on the prepared baking sheet.
    • Brush the tops with the remaining egg wash.
