☆Ingredients:
4 slices of Swiss cheese
1/2 cup all-purpose flour
1 teaspoon salt
4 boneless, skinless chicken breasts
4 slices of deli ham
1/2 teaspoon black pepper
1 cup breadcrumbs
2 eggs, beaten
Cooking spray or olive oil
☆Instructions:
Preheat your oven to 375°F (190°C).
Lay out the chicken breasts on a clean surface and cover with plastic wrap. Using a meat mallet or rolling pin, pound each chicken breast to about 1/4-inch thickness.
Season each flattened chicken breast with salt and pepper.
Place a slice of ham and a slice of Swiss cheese on top of each seasoned chicken breast.
Starting from the narrowest end, roll up each chicken breast tightly and secure with toothpicks.
In three separate shallow dishes, prepare your coating stations: one with the flour mixed with salt and pepper, one with the beaten eggs, and one with the breadcrumbs.
Dredge each chicken roll first in the seasoned flour, shaking off any excess, then dip into the beaten eggs, and finally coat evenly with breadcrumbs, pressing gently to adhere.
Place the coated chicken rolls on a baking sheet lined with parchment paper or lightly greased with cooking spray or olive oil.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
