Sure! Here’s a simple recipe for sausage breakfast muffins:

Ingredients:

  • 1 lb (450g) ground sausage
  • 1 cup (125g) all-purpose flour
  • 1 cup (240ml) milk
  • 1 cup (100g) shredded cheddar cheese
  • 1/2 cup (120ml) vegetable oil
  • 2 eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: chopped green onions, diced bell peppers, or any other desired veggies

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a skillet over medium heat, cook the ground sausage until browned and fully cooked. Remove from heat and set aside to cool slightly.
  3. In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
  4. In another bowl, beat the eggs, then stir in the milk and vegetable oil until well combined.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  6. Fold in the cooked sausage, shredded cheddar cheese, and any optional veggies you’d like to add.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
