Recipe:

Ingredients:

  • 2 cups elbow macaroni (or any short pasta)
  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Pasta:
    • Cook the macaroni according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Beef Mixture:
    • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
    • Add the chopped onion and minced garlic to the beef, and cook until the onion is soft and translucent.
    • Stir in the tomato sauce, Italian seasoning, paprika, salt, and pepper. Simmer for about 5 minutes, allowing the flavors to meld together.
  3. Make the Cheese Sauce:
    • In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until bubbly and slightly golden.
    • Gradually whisk in the milk, stirring constantly until the mixture thickens.
    • Remove from heat and stir in 1 1/2 cups of cheddar cheese until melted and smooth.
  4. Assemble the Casserole:
    • Preheat your oven to 350°F (175°C).
    • In a large mixing bowl, combine the cooked macaroni with the cheese sauce. Mix well until the pasta is evenly coated.
    • Spread half of the macaroni mixture in the bottom of a greased 9×13-inch baking dish.
    • Layer the beef mixture over the macaroni.
    • Top with the remaining macaroni mixture.
  5. Add the Cheese Topping:
    • Sprinkle the remaining 1/2 cup of cheddar cheese and 1 cup of mozzarella cheese over the top of the casserole.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  7. Serve:
    • Let the casserole cool slightly before serving. Garnish with fresh parsley if desired.

Tips:

  • For added flavor, you can mix in some diced bell peppers or mushrooms with the beef.
  • This casserole can be made ahead and refrigerated, then baked when ready to serve. Just add an extra 5-10 minutes to the baking time if baking from cold.
