Ingredients:

For the Cornbread:

  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced green onions
  • 1/4 cup chopped cilantro (optional)

Instructions:

  1. Prepare the Cornbread:
    • Preheat your oven to 400°F (200°C). Grease a 9-inch square baking pan.
    • In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
    • In another bowl, whisk together the milk, vegetable oil, and eggs.
    • Combine the wet ingredients with the dry ingredients, stirring until just combined.
    • Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

    • Cover the trifle and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
