Recipe for Fruit and Nut Nougat Bars:

Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup honey
  • 1/4 cup water
  • 1 large egg white, at room temperature
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup almonds (or your choice of nuts), toasted and roughly chopped
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots, chopped
  • 1/2 cup raisins or any other dried fruits

Instructions:

  1. Prepare the Pan: Line a loaf pan or small square pan with parchment paper, leaving some overhang for easy removal later. Grease the parchment paper lightly.
  2. Cook the Syrup: In a heavy-bottomed saucepan, combine the sugar, honey, and water. Cook over medium heat, stirring until the sugar dissolves. Use a candy thermometer to monitor the temperature. Continue cooking without stirring until it reaches 250°F (121°C).
  3. Beat the Egg White: While the syrup is cooking, beat the egg white and salt in a clean, dry bowl until soft peaks form.
  4. Combine Syrup and Egg White: Once the syrup reaches the right temperature, slowly pour it into the beaten egg white while continuing to beat at low speed. Be careful, as the syrup is very hot.
  5. Add Vanilla and Beat: Add the vanilla extract and increase the speed to medium-high. Beat until the mixture becomes thick and glossy, which should take about 5–7 minutes.
  6. Mix in Nuts and Dried Fruits: Fold in the toasted nuts and dried fruits quickly, as the nougat will start to set.
  7. Pour and Set: Pour the nougat mixture into the prepared pan, spreading it evenly with a spatula. Let it sit at room temperature for about 2-3 hours or until firm.
  8. Cut and Serve: Once set, lift the nougat out of the pan using the parchment overhang. Cut into bars or bite-sized pieces with a sharp knife. Store in an airtight container at room temperature.
