For the Cake:

  • 2 cups (250g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 3/4 cup (75g) unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup (240ml) milk
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water

For the Chocolate Fudge Frosting:

  • 1 cup (225g) unsalted butter, softened
  • 2/3 cup (65g) unsweetened cocoa powder
  • 3 cups (375g) powdered sugar
  • 1/3 cup (80ml) milk
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
    • Carefully stir in the boiling water until the batter is smooth. The batter will be thin.
    • Pour the batter evenly into the prepared cake pans.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    • Remove the cakes from the oven and allow them to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  2. Make the Chocolate Fudge Frosting:
    • In a large bowl, cream the softened butter until smooth.
    • Gradually add the cocoa powder, powdered sugar, milk, vanilla extract, and a pinch of salt.
    • Beat on low speed until combined, then increase to medium-high speed and beat until the frosting is smooth and creamy.
    • If the frosting is too thick, add more milk, one tablespoon at a time, until you reach the desired consistency.
  3. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a generous amount of frosting over the top.
    • Place the second cake layer on top and frost the top and sides of the cake.
    • Use a spatula to create decorative swirls on the top if desired.
  4. Serve and Enjoy:
    • Slice the cake and serve with a cold glass of milk or a scoop of vanilla ice cream for the ultimate chocolate experience.
