- 3/4 cup (75g) unsweetened cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup (240ml) milk
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 2 tsp vanilla extract

For the Chocolate Fudge Frosting:
- 1 cup (225g) unsalted butter, softened
- 2/3 cup (65g) unsweetened cocoa powder
- 3 cups (375g) powdered sugar
- 1/3 cup (80ml) milk
- 1 tsp vanilla extract
- A pinch of salt
Instructions:
- Prepare the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
- Carefully stir in the boiling water until the batter is smooth. The batter will be thin.
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cakes from the oven and allow them to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
- Make the Chocolate Fudge Frosting:
- In a large bowl, cream the softened butter until smooth.
- Gradually add the cocoa powder, powdered sugar, milk, vanilla extract, and a pinch of salt.
- Beat on low speed until combined, then increase to medium-high speed and beat until the frosting is smooth and creamy.
- If the frosting is too thick, add more milk, one tablespoon at a time, until you reach the desired consistency.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread a generous amount of frosting over the top.
- Place the second cake layer on top and frost the top and sides of the cake.
- Use a spatula to create decorative swirls on the top if desired.
- Serve and Enjoy:
- Slice the cake and serve with a cold glass of milk or a scoop of vanilla ice cream for the ultimate chocolate experience.
