Recipe:
Ingredients:
For the Shortbread Base:
- 1 cup (225g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 2 cups (250g) all-purpose flour
- 1/4 tsp salt
For the Caramel Layer:
- 1 can (14 oz/400g) sweetened condensed milk
- 1/2 cup (100g) brown sugar
- 1/2 cup (115g) unsalted butter
- 2 tbsp corn syrup (optional)
- 1/4 tsp salt
- 1 tsp vanilla extract
For the Peanut Topping:
- 2 cups (300g) roasted peanuts, unsalted or lightly salted
Instructions:
- Prepare the Shortbread Base:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Gradually add the flour and salt, mixing until the dough comes together.
- Press the dough evenly into the bottom of a greased 9×13 inch (23×33 cm) baking dish.
- Bake for 15-20 minutes, or until the edges are lightly golden. Set aside to cool.
- Make the Caramel Layer:
- In a medium saucepan, combine the sweetened condensed milk, brown sugar, butter, corn syrup (if using), and salt.
- Cook over medium heat, stirring constantly, until the mixture thickens and turns a deep golden brown color, about 10 minutes.
- Remove from heat and stir in the vanilla extract.
- Pour the caramel evenly over the cooled shortbread base.
- Add the Peanut Topping:
- While the caramel is still warm, sprinkle the roasted peanuts evenly over the top, pressing them lightly into the caramel to ensure they stick.
- Allow the caramel to set completely at room temperature, or refrigerate to speed up the process.
- Cut and Serve:
- Once the caramel is set, cut the dessert into squares or bars with a sharp knife.
- Serve and enjoy!
These Caramel Peanut Squares are best enjoyed within a few days but can be stored in an airtight container at room temperature or in the refrigerator for up to a week.
