  • 1/2 cup (100g) brown sugar
  • 1/2 cup (115g) unsalted butter
  • 2 tbsp corn syrup (optional)

  • 1 tsp vanilla extract

For the Peanut Topping:

  • 2 cups (300g) roasted peanuts, unsalted or lightly salted

Instructions:

  1. Prepare the Shortbread Base:
    • Preheat your oven to 350°F (175°C).
    • In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
    • Gradually add the flour and salt, mixing until the dough comes together.
    • Press the dough evenly into the bottom of a greased 9×13 inch (23×33 cm) baking dish.
    • Bake for 15-20 minutes, or until the edges are lightly golden. Set aside to cool.
  2. Make the Caramel Layer:
    • In a medium saucepan, combine the sweetened condensed milk, brown sugar, butter, corn syrup (if using), and salt.
    • Cook over medium heat, stirring constantly, until the mixture thickens and turns a deep golden brown color, about 10 minutes.
    • Remove from heat and stir in the vanilla extract.
    • Pour the caramel evenly over the cooled shortbread base.
  3. Add the Peanut Topping:
