Recipe for Turkish Baked Rice Pudding (Fırın Sütlaç)

Ingredients:

  • 1 liter (4 cups) whole milk
  • 1/2 cup rice
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon vanilla extract
  • A pinch of salt
  • Ground cinnamon (for garnish)

Instructions:

  1. Prepare the Rice:
    • Rinse the rice under cold water until the water runs clear. This helps remove excess starch.
    • In a medium saucepan, add the rice and water. Bring to a boil, then reduce the heat and let it simmer until the rice is soft and the water is mostly absorbed. This should take about 15 minutes.
  2. Make the Pudding:
    • Add the milk to the cooked rice in the saucepan and bring it to a gentle boil over medium heat.
    • Stir frequently to prevent the rice from sticking to the bottom of the pan.
    • Once the mixture starts to thicken, add the sugar and a pinch of salt. Stir until the sugar is fully dissolved.
    • In a small bowl, mix the cornstarch with a little cold water to make a slurry. Add this to the rice and milk mixture. Stir continuously for about 5 minutes until the mixture thickens to a pudding-like consistency.
  3. Bake the Pudding:
    • Preheat your oven to 180°C (350°F).
    • Pour the rice pudding into individual oven-safe ramekins or a large baking dish.
    • Place the ramekins or baking dish in a larger baking tray. Fill the tray with hot water halfway up the sides of the ramekins (this is called a water bath and helps to cook the pudding evenly).
    • Bake in the preheated oven for about 20-25 minutes or until the tops are lightly browned.

    • Let the pudding cool down to room temperature, then refrigerate for at least 2 hours to set.
