Indulge in the rich and luxurious taste of these homemade chocolate hazelnut truffles, inspired by the classic Ferrero Rocher chocolates. Perfect for gifting during the holidays or as a special treat for yourself, these truffles feature a crunchy exterior with a creamy, nutty center. The combination of chocolate, hazelnuts, and crispy rice makes these truffles irresistible and easy to make.

Recipe:

Ingredients:

  • 1 cup hazelnuts, toasted and skins removed
  • 1 cup Nutella or any hazelnut spread
  • 2 cups crispy rice cereal
  • 12 oz milk chocolate, chopped (or chocolate chips)
  • 4 oz dark chocolate, chopped (optional, for a richer taste)
  • 1 tablespoon vegetable oil (optional, for a smoother coating)

Instructions:

  1. Prepare the Hazelnuts:
    • Toast the hazelnuts in a dry skillet over medium heat, stirring occasionally, until fragrant and slightly golden. Let them cool, then rub the skins off using a clean kitchen towel. Set aside.
  2. Make the Filling:
    • In a mixing bowl, combine the Nutella with 1/2 cup of the toasted hazelnuts (chop them finely first). Mix until well combined.
  3. Shape the Truffles:
    • Scoop small spoonfuls of the Nutella mixture and roll them into balls, about 1 inch in diameter. Place a whole hazelnut in the center of each ball as you shape them.
    • Once all balls are shaped, place them on a baking sheet lined with parchment paper and freeze for about 30 minutes, or until firm.
  4. Prepare the Chocolate Coating:
    • In a microwave-safe bowl, melt the milk chocolate (and dark chocolate if using) in 30-second increments, stirring between each, until smooth. If the chocolate is too thick, add a tablespoon of vegetable oil to thin it out.
  5. Coat the Truffles:
    • Remove the Nutella balls from the freezer. Dip each ball into the melted chocolate, ensuring it is fully coated. Let the excess chocolate drip off.
    • Quickly roll the chocolate-coated ball in the crispy rice cereal to coat the outside.
    • Place the coated truffles back on the parchment-lined baking sheet.
  6. Set the Truffles:
    • Once all truffles are coated, let them sit at room temperature or refrigerate until the chocolate is fully set.
  7. Serve and Enjoy:
    • Arrange the truffles on a plate or package them in a gift box. These delicious treats are ready to be enjoyed!

Tip: Store these truffles in an airtight container in the refrigerator for up to two weeks. Let them sit at room temperature for a few minutes before serving to soften slightly.
