  • 200g (7 oz) dark chocolate, chopped
  • 100ml (⅓ cup) heavy cream
  • Chocolate sprinkles for decoration

Instructions:

  1. Prepare the Chocolate Sponge Cake:
    • Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
    • In a large bowl, beat the eggs and sugar together until the mixture is pale and fluffy.
    • Sift in the flour, cocoa powder, baking powder, and salt, then gently fold the dry ingredients into the egg mixture.
    • Add the vanilla extract and mix until just combined.
    • Pour the batter into the prepared baking sheet and spread it evenly.
