Ingredients:
1 cup shredded carrots
1 cup sugar
1 teaspoon baking powder
1 egg
butter (to grease the pan)
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 cup milk
Method:
1. Preheat oven to 350°F (175°C).
2. In a bowl, whisk together grated carrots, sugar, egg, vegetable oil, and vanilla extract until smooth
. 3. Stir in flour, baking powder, baking soda, cinnamon, nutmeg, and salt until combined.
4. Add the flour, stirring until combined. Then, add the milk, stirring until combined.5. Pour the batter into a greased and floured cake pan
6. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
7. Allow to cool before frosting.
