Ingredients:

  • 4 ripe bananas, sliced and frozen

Directions:

  1. Prepare the Bananas:
    1. Peel and slice the bananas. Place them in a single layer on a baking sheet and freeze for at least 2 hours, or until completely frozen.
  2. Make the ‘Ice Cream’:
    1. In a food processor or high-speed blender, add the frozen banana slices.
    2. Blend until the bananas break down into small pieces.
    3. Add peanut butter, almond milk, and vanilla extract.
    4. Continue to blend until the mixture is smooth and creamy, scraping down the sides as needed.
  3. Serve Immediately:
    1. Serve the ‘ice cream’ immediately for a soft-serve consistency.
    2. For a firmer texture, transfer the mixture to an airtight container and freeze for an additional 1-2 hours.
