This hearty side dish is a classic comfort food combination. The smoky flavor of bacon infuses the tender cabbage with a rich depth, while the sweetness of onion and garlic adds a delightful complexity. Perfect for any meal!

Ingredients

  • 6 slices bacon, chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 large head cabbage, cored and sliced
  • 1 tablespoon salt, or to taste
  • 1 teaspoon ground black pepper
  • ½ teaspoon onion powder *½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes (optional, for heat)

Instructions

  1. In a large skillet over medium heat, cook bacon until crispy. Remove bacon from the pan, leaving the drippings.
  2. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  3. Add cabbage to the skillet, along with salt, pepper, onion powder, thyme, and red pepper flakes (if using). Stir to coat evenly.
  4. Cover the skillet and cook over medium-low heat until the cabbage is tender and wilted, about 15-20 minutes, stirring occasionally.
  5. Crumble the cooked bacon and add it back to the cabbage mixture. Stir to combine.
  6. Taste and adjust seasonings as needed.
  7. Serve immediately as a side dish.
