Ingredients:

  • 4 medium apples (Granny Smith or any tart variety)
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice

For the cake:

  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) sugar
  • 2 large eggs
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom (optional)
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) milk
  • 1 teaspoon vanilla extract

Instructions:

Preparing the apples:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23cm) round cake pan.
  2. Peel, core, and slice the apples thinly.
  3. Toss the apple slices with 2 tablespoons of sugar, 1 teaspoon of cinnamon, and 1 teaspoon of lemon juice. Set aside.

Making the cake:

  1. In a large bowl, cream the butter and sugar together until light and fluffy.
  2. Add the eggs one at a time, beating well after each addition.
  3. In a separate bowl, whisk together the flour, baking powder, ground cinnamon, ground cardamom (if using), and salt.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Stir in the vanilla extract.
  6. Pour half of the batter into the prepared cake pan. Arrange half of the apple slices over the batter. Spread the remaining batter over the apples and top with the remaining apple slices in a decorative pattern.

Baking the cake:

  1. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serving:

Serve the Swedish Apple Cake warm or at room temperature, with a dollop of whipped cream or a scoop of vanilla ice cream. Enjoy!
