Edd Kimber’s Yorkshire Pudding
Ingredients:
- 4 large eggs
- 200 ml whole milk
- 200 ml water
- 200 g plain flour
- 1/2 tsp salt
- 2 tbsp vegetable oil or beef dripping
Instructions:
- Prepare the Batter:
- In a large bowl, whisk the eggs until they are well combined.
- Gradually add the milk and water, continuing to whisk until the mixture is smooth.
- Sift the flour and salt into the mixture, whisking continuously until you have a smooth batter with no lumps.
- Let the batter rest for at least 30 minutes, or up to an hour. Resting the batter allows the flour to fully absorb the liquid, resulting in lighter puddings.
- Heat the Oven:
- Preheat your oven to 220°C (425°F). Place a 12-hole muffin tin or a Yorkshire pudding tin in the oven to heat up.
- Add the Oil:
- Once the oven and the tin are hot, carefully remove the tin from the oven. Add about 1/2 teaspoon of vegetable oil or beef dripping to each hole. The oil should be smoking hot before you add the batter.
- Cook the Puddings:
- Quickly and carefully pour the batter into the hot tin, filling each hole about halfway.
- Return the tin to the oven and bake for about 20-25 minutes, or until the puddings are well-risen, golden brown, and crisp. Do not open the oven door during the cooking time, as this can cause the puddings to deflate.
- Serve:
- Remove the Yorkshire puddings from the tin and serve immediately. They are perfect with roast beef and gravy or any of your favorite roast dinners.
