Pineapple pudding is a classic dessert that combines the tropical sweetness of pineapple with the softness of a pudding. To prepare it, stale bread or sponge cake is soaked in a mixture of crushed pineapple, pineapple juice, sugar and eggs.

The mixture is poured into a mould and baked until firm and golden. Once baked, it is left to cool and served cold, often accompanied by whipped cream or vanilla ice cream. This dessert is appreciated for its sweet and sour taste and creamy texture, making it a popular choice for any occasion.

It is easy to make and can be adapted to different preferences by adding ingredients such as grated coconut or cherries in syrup. Here is a basic recipe for making pineapple pudding:

Ingredients:

  • 1 can (20 oz) pineapple in syrup or pineapple juice
  • 6 cups stale bread or cake (preferably crustless), cut into cubes
  • 4 large eggs
  • 1 cup of sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup melted butter

Instructions:

Preheat the oven to 180°C (350°F) and lightly grease a baking pan with butter or nonstick spray.

Drain the pineapple, reserving the liquid. Cut the pineapple into small pieces.

In a large bowl, beat the eggs and sugar until well combined. Add the vanilla extract and salt, and continue beating.

Add the diced pineapple and stale bread or cake to the egg and sugar mixture. Stir well to make sure all the bread pieces are coated with the mixture.

Pour the melted butter over the mixture and stir again to distribute evenly.

Pour the mixture into the prepared pan, pressing down lightly with a spoon or spatula to ensure it is compact.

Bake in the preheated oven for approximately 45-50 minutes, or until the pudding is golden and firm to the touch.

While the pudding is in the oven, you can make an optional glaze by mixing some of the pineapple liquid with powdered sugar, then pouring it over the warm pudding right after removing it from the oven.
