INGREDIENTS  

  • 1 pound smoked sausage can use Polish sausage, turkey sausage, Andouille sausage, cut into slices
  • 4 cups frozen green beans or fresh green beans or 2 15 ounce cans
  • 1 14.5 ounce can beef broth
  • 2 cups water
  • 3 to 4 large potatoes peeled or unpeeled and cut up (can use russet or red potatoes)
  • 1 large onion peeled and cut in rings
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 2 teaspoons bacon drippings Optional

INSTRUCTIONS 

  • Combine all ingredients and place in 3 quart crock pot or a pan on top of the stove.
  • Cook in crock pot on low for 5 to 6 hours or high for 4 hours or until the potatoes are done.
  • If making on stove cook until potatoes are done about 45 minutes to an hour. Makes 6 to 8 servings.

NOTES

I usually brown my sausage and onion in bacon drippings on top of the stove before putting in crock pot. It just adds some extra flavor to this dish but it is not necessary to do so. We love lots of extra black pepper added before serving, too.
