Mexican Street Corn Pasta Salad🐰

1 pound pasta cook and cooled

Mix in:

4 cans corn (I used the southwest one)(you can also use fresh, grilled or charred)

1 bell pepper chopped small

1/2 a red onion chopped small

1 jalapeno chopped small

1/3 cup cilantro (more or less depending on if you like it)

1 cup Queso fresco cheese crumbled or 1/2-3/4 cup cotija cheese (this one is a little sharper in taste)

In a separate bowl add:

3/4 cup mayonnaise

3/4 cup sour cream

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp slap your mama

1 lime juice

(You can do more seasoning for a better kick)

Mix noodle mixture with sauce well and add salt and pepper.

Top with 1/4 cup more Queso fresco crumbles

Refrigerate
