Ingredients:

For the meatballs:

  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups spinach or kale, chopped
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for garnish)

Instructions:

  1. In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, dried oregano, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Cook until vegetables are softened, about 5-7 minutes.
  4. Add the beef or chicken broth, diced tomatoes (with their juices), dried thyme, and dried rosemary to the pot. Bring the mixture to a simmer.
  5. Gently drop the meatballs into the simmering soup. Cook for about 10-15 minutes, or until the meatballs are cooked through.
  6. Taste the soup and adjust the seasoning with salt and pepper as needed.
  7. Stir in the chopped spinach or kale and cook for an additional 2-3 minutes, until the greens are wilted.
  8. Ladle the soup into bowls and garnish with chopped parsley and grated Parmesan cheese.
  9. Serve hot and enjoy your homemade meatball soup!
