Ingredients:
- 8 oz (about 2 cups) elbow macaroni
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon mustard powder (optional)
- 1/4 teaspoon garlic powder (optional)
- 2 cups whole milk
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese (optional, for extra creaminess)
- 1/2 cup grated Parmesan cheese
- Bread crumbs or crushed crackers for topping (optional)
Instructions:
- Cook the Macaroni: Cook the elbow macaroni according to the package instructions. Drain and set aside.
- Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Stir in the flour, salt, pepper, paprika, mustard powder, and garlic powder (if using) until well combined. Cook for 1-2 minutes to eliminate the raw flour taste.
- Add Milk: Gradually whisk in the milk, stirring constantly to avoid lumps. Continue to cook and stir until the mixture thickens, usually 5-7 minutes.
