Pistachio Lush Dessert is an incredibly easy dessert that is perfect for potlucks or even holidays! Its light & fluffy with an amazing cheesecake layer that makes it insanely delicious!

Ingredients:

For the Crust:

  • 1 cup (about 125g) all-purpose flour
  • 1/2 cup (1 stick or 113g) unsalted butter, melted
  • 1/2 cup chopped pistachios
  • 1 tablespoon granulated sugar

For the Pistachio Layer:

  • 1 package (3.4 ounces or 96g) instant pistachio pudding mix
  • 1 1/2 cups (360ml) cold milk
  • 1 8-ounce (225g) package cream cheese, softened
  • 1 cup (240ml) heavy cream, whipped to stiff peaks

For the Topping:

  • 1 8-ounce (225g) container of whipped topping (or freshly whipped cream)
  • Chopped pistachios for garnish

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Crust:
    • In a bowl, combine the melted butter, flour, chopped pistachios, and sugar. Press the mixture into the bottom of a 9×13-inch baking dish to form the crust.
  3. Bake the Crust:
    • Bake the crust in the preheated oven for about 15 minutes or until it’s lightly golden. Allow it to cool completely.
  4. Make the Pistachio Layer:
    • In a mixing bowl, beat together the softened cream cheese and pistachio pudding mix. Gradually add the cold milk while continuing to mix until smooth.
  5. Fold in Whipped Cream:
    • Gently fold in the whipped cream until well combined. Spread the pistachio mixture over the cooled crust.
  6. Chill:
    • Place the dessert in the refrigerator and let it chill for at least 4 hours or until set.
  7. Add Toppings:
    • Before serving, spread a layer of whipped topping (or freshly whipped cream) over the pistachio layer. Sprinkle with chopped pistachios for garnish.
  8. Serve:
