a simple and spicy healthy rice and lentil (green gram or moong bean) based dish ideally served for lunch and dinner. typical khichdi recipe is spiceless, unseasoned, mild-tasting bland in taste and typically served to kids and for adults with indigestion problems.

Ingredients:

  • 1 cup basmati rice
  • 1/2 cup split yellow moong dal (lentils)
  • 1 cup mixed vegetables (carrots, peas, beans, potatoes), chopped
  • 1 large onion, finely chopped
  • 1 large tomato, chopped
  • 1-2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons ghee or oil
  • 4 cups water
  • Fresh coriander leaves for garnish

Instructions:

  1. Wash the rice and lentils together under running water until the water runs clear. Soak them in water for about 20 minutes, then drain.
  2. In a pressure cooker or a heavy-bottomed pot, heat ghee or oil over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
  3. Add chopped onions and sauté until they become golden brown.
  4. Add green chilies and ginger-garlic paste. Sauté for a minute until the raw smell disappears.
  5. Add chopped tomatoes and cook until they turn soft and the oil starts separating.
  6. Add turmeric powder, cumin powder, coriander powder, and red chili powder. Mix well.
  7. Add mixed vegetables and sauté for a few minutes.
  8. Add the drained rice and lentils. Mix everything together.
  9. Pour in 4 cups of water and add salt to taste. Stir well.
  10. Close the pressure cooker lid or cover the pot, and cook on medium heat until you hear 2-3 whistles (or if using a pot, until rice and lentils are cooked and the mixture is well-cooked).
  11. Once the pressure is released, open the lid and gently fluff the khichdi with a fork.
  12. Garnish with fresh coriander leaves.

Serve the Masala Vegetable Khichdi hot with yogurt or a side of pickles. Enjoy your delicious and nutritious meal!
