Soft, flaky, and tender, these Blueberry Scones are a family favorite. Made with only simple ingredients, these breakfast scones come together quickly and easily!

Ingredients:

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1 cup fresh or frozen blueberries
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • Optional: 1 tablespoon lemon zest (for added flavor)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs. The butter should be evenly distributed.
  4. Gently fold in the blueberries, making sure they are evenly distributed throughout the mixture.
  5. In a separate bowl, whisk together the milk and vanilla extract. If using lemon zest, add it to the wet ingredients.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few dry spots.
  7. Turn the dough out onto a lightly floured surface and gently knead it a couple of times to bring it together. Pat the dough into a circle about 1 inch (2.5 cm) thick.
  8. Using a sharp knife or a round cutter, cut the dough into wedges or circles, depending on your preference.
  9. Place the scones on the prepared baking sheet, leaving a little space between each.
  10. Bake in the preheated oven for 15-18 minutes or until the scones are golden brown on top.
  11. Allow the scones to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  12. Optionally, you can drizzle a simple glaze made from powdered sugar and a little milk over the cooled scones.
